A New Cafeteria Company Brings New and Familiar Items to the Plates of Students at PACA

As the 2025-2026 school year started, PACA hired a new cafeteria company to prepare the food for all the students, teachers and staff who work at the school. The new food service is called Legusta, and is a service provided by a local Brazilian restaurant.
Legusta is a self-service restaurant located in Zona-sul São Paulo. Cléber Trancoso Couto, the owner of the restaurant, is the manager of PACA’s new cafeteria company. He had 15 years of experience in the area of culinary service before coming to serve the community at PACA.
The priority of his company is serving the community with food, prepared with love and dedication.
“My company, first of all, provides good tasting food that will have an impact on the students/teachers day, ” said Cléber. “Not only this, I expect my cooks to dedicate their time and effort into it. Our food is always prepared with love and dedication.”
The new company offers a whole new menu with a large variety of different dishes.
Cléber says,”The company working for PACA has developed a menu that will satisfy the community’s needs, bringing a variety of dishes with all types of culinary, satisfying all tastes.
Legusta also introduced a new cooking team. Each of the employees have different responsibilities and functions.
“From now on, our cooking team has two members that are the head chefs. They organize and manage the whole kitchen every single day,” said Cléber. “ Our cooking team has six members.”
According to Cléber, there are two employees in each section.
“We have two cooks that prepare the food, two employees that take care of washing the dishes, and two cooks that serve the food,” said Cléber.
Felipe Wilcken, a 14 year old freshman, has changed his daily eating habits based on the new food offered at PACA. He has now gone from eating home-food to eating PACA food.
“When PACA announced a new cafeteria company, I was very surprised,” said Wilcken. “PACA food has been the exact same over the past nine years that I have studied here.”
Wilcken decided to give the PACA food a chance, because he saw the company’s potential and improvement.
“When I finally had the chance to try it, I was amazed by how much care and love was put in,” said Wilken. “Not only this, but I was impressed with the food’s taste, the cafeteria has now started to use proper amounts of spices. Last year they would never find the sweet spot.”
According to director of advancement, Kevin Flurry, the PACA food has drastically improved.
Wilcken agreed to this, and said,” Bringing in a new chef and a new nutritionist brought a new view to PACA food. The chef is also very open for recommendations, and likes to improve, benefiting the whole PACA community.”
